How many logo options do I get?

Three genuinely different directions, not three versions of the same shape, then two rounds of refinement on the one you pick. In my experience ten options scatter the decision rather than help it.

Do I get the source files?

Yes, all of them. The original Illustrator and Photoshop files plus every export format. That isn't a concession. You paid for them, they're yours.

Will you brand a business that hasn't launched yet?

Yes, and sometimes it's easier because there's no legacy work to accommodate. But we need to agree first on who your audience is and where you sit in the market. Without those answers, identity becomes decoration guessed at.
